Cookies and Creme cupcakes

My inspiration today was my deep love of Oreos..I adapted a few recipes I have found over the years to be very trusted to produce good cake and created my version of cookies and creme. I have been playing a bit more with pudding in the batter to produce a sturdy quality for layer cakes without sacrificing the moistness of the cake itself. I always use a simple syrup over the cakes to also help retain the moisture, in this case I used a simple syrup flavored with vanilla and brandy. depending on the cake I also love to flavor with honey or citrus to bring out the flavors...

For this cake you will need:

3/4 cup butter 
1 1/3 cup granulated sugar
3 eggs
1 tsp vanilla extract

1 cup milk
1/4 cup cake batter Vodka(you can omit this if you choose and add more milk in its place)
1 small pkg Oreo pudding mix 
2 1/4 cup all purpose flour 
2 teaspoons baking powder 



Mix the butter with the sugar in a mixer until pale in color and fluffy, add the eggs one at a time until combined and then add the remaining wet ingredients. when mixed thoroughly add the remaining ingredients and mix until incorporated.

Line the baking cups with a Oreo cookie on the bottom of each liner and cover 2/3 of the way full with the batter. Bake at 350 degrees for approximately 17-20 min depending on your oven, mine took 18 mins. when slightly cooled I saturated each cake with about a tsp of simple syrup and allowed to cool before frosting. 

For the frosting I used:

1/2 pkg cream cheese
1/4 cup butter
1 tsp vanilla
1 tsp cocoa powder(for color mostly)
4-5 cups powdered sugar 
1/2 cup crushed Oreos
few tbsp milk




I mixed everything in the mixer till creamy and the consistency you prefer to work with. I like mine a little thicker to hold the shape of frosting and when I mixed the first time and added the Oreos in it took on a grayish color which I didn't like so much thus I added a bit of cocoa powder to give it a more appealing presentation and it worked beautifully.
